St. Louis was once known for its fried-brain sandwich, which featured one slice of calf brain on a slice of bread. Most popular in the late 1880s when cattle production was at its peak, demand for this culinary delight has dwindled, but one can still find it at many Missouri restaurants.

About: Our BS in Nutrition and Dietetics with an Emphasis in Culinary Arts is accredited by the American Dietetic Association and provides training in the culinary arts as outlined by the American Culinary Federation. Students completing our program are eligible to apply to dietetic internships and ultimately become registered dietitians trained in the culinary arts. Graduates can find jobs in personal chef/dietitian services, food service management, consultation with restaurants and food companies, food and nutrition research, sports and wellness nutrition, private practice, health care and much more! To our knowledge, we are the only nutrition and dietetics program in the nation where students can fulfill undergraduate requirements for becoming a Registered Dietitian while also meeting American Culinary Federation educational requirements. Along with developing a strong base in the sciences, students take unique coursework including Hot Topics in Nutrition, Ethnic Meal Management, and Culinary and Medicinal Herbs. Students enjoy hands on training with experienced chefs and nutrition faculty. Further, our typical class size is less than 20 students, providing regular interaction with faculty. We are also unique in that we are located on a Health Sciences Center in a thriving University and our affiliations with health care facilities and local chefs increase student opportunities.
